Vegan Pancakes





For me, Sundays should be Pancake day. I used to always go out for brunch and I would always order vegan pancakes that costs almost $10. They are not usually how I like it-- they're either too dense or too thin. I found this recipe that's easy and super fluffy good. Enjoy! Xx

Makes 6-8 pancakes

Ingredients:

  • cup organic All-Purpose flour
  • tbsp organic cane sugar
  • tbsp baking powder
  • 1/8 tsp sea salt
  • 1 1/4 cup organic soymilk 
  • tbsp vegetable oil
  • 2-3 drops of pure Madagascar vanilla extract (optional)
  • Pure Maple syrup (preferably organic)

Directions:
  • Heat non-stick pan or griddle to medium setting.
  • Combine and mix the dry ingredients.
  • Add wet ingredients to the mixture.
  • Mix until smooth and set aside for 10 minutes or until the batter doubles in size.
  • Ladle batter onto the pan.
  • Flip when you see bubbles in the middle of the pancake.
  • Leave on the other side for about a minute or until cooked.
  • Serve immediately and best enjoyed with fresh fruits.

Quick and Easy Tofu Scramble - Vegan




This is a simple, but delicious version of Tofu Scramble perfect for breakfast or Sunday brunch. Best enjoyed with my vegan pancakes! Xx

Makes 3-4 servings


Ingredients:

  • 2 tbsp Greek olive oil
  • 1 small organic onion, chopped
  • 1 organic Roma tomato, chopped
  • 1 organic garlic clove, diced
  • 1 block of Organic Extra Firm Tofu**, crumbled
  • 1/4 to 1/2 tsp Kala Namak (Black Salt)** (adjust to taste)
  • A pinch of organic Turmeric
  • A pinch of Smoked Paprika (optional)
  • Freshly ground pepper (adjust to taste)
  • Sea salt (adjust to taste)
  • 2 cups organic fresh greens (preferably arugula, baby kale, or spinach)


Directions:
  • Heat olive oil in a pan on medium heat then add onion. Sauté for 1-2 mins until tender. 
  • Add tomato and cook for 1-2 mins until soft. 
  • Add garlic and sauté for about a minute.
  • Crumble tofu with your hands directly on the pan. 
  • Add kala namak, turmeric, (paprika), freshly ground pepper, and sea salt.
  • Sauté everything for 4-5 mins.
  • Turn off heat and add the greens. Mix until the greens start to wilt. 
  • Serve immediately and enjoy!

Tips:

**Make sure to squeeze out all the water from the tofu. I prefer using Whole Foods Market brand.
**Kala Namak or Black Salt is actually pink and is available at most Middle Eastern stores.
